  • Stuffed Herbed Beef Tenderloin
  • Beef tenderloin stuffed with herbs and Asiago cheese.
  • Servings: 4  - Prep. Time: 20 min - Start to Finish: 55 min
Ingredients
  • 1 pound beef tenderloin, butterflied and pounded thin
  • 1 teaspoon basil, chopped
  • 1 teaspoon thyme, chopped
  • 1 teaspoon oregano, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/2 cup Asiago cheese, grated
  • 1/4 cup red wine
  • Salt and pepper to taste
  • Salt and pepper to taste
Directions
  • Take beef once it is butterflied and pounded thin, and lay it out.
  • Rub minced garlic, basil, oregano, thyme, red pepper flakes, Worcestershire sauce and 1 tablespoon olive oil over the top of the filet.
  • Sprinkle cheese over seasoned meat.
  • Next start at one end of meat and roll tightly.
  • Using butcher twine, tie filet to keep it together.
  • In a large skillet add remaining olive oil and sauté over medium heat for 20 minutes, turning every 5 minutes (cook time will vary depending on how yoy like your beef cooked).
  • Remove meat from skillet and deglaze pan with red wine.
  • Place stuffed filet on a serving dish and pour red wine over meat.
  • Serve.
Serving Ideas:
  • Garnish with fresh chopped basil.
Notes:
  • This also can be baked at 350° F for 35 minutes or longer if you prefer it more well done.
